GF Overnight French Toast
This is the first post in our blog, and we will start out by sharing a gluten free recipe! It's delicious- and it's even won a recipe contest! You will love the fact that you can make it a day ahead, and as always- it's gluten free!

Ingredients:
1 loaf of gluten free bread (I used Canyon Bakehouse cinnamon raisin)
1-2 packages of cream cheese cut into 1" cubes, use 1 for less calories and cream cheese- or 2 as suggested (neufchatel would work too)
2 apples peeled and chopped 1/2" or smaller peices
12 eggs
2 cups of milk
1 tsp vanilla
1/3 cup maple syrup
1-2 tsp cinnamon
1/4 tsp clove
1/2 tsp nutmeg or allspice
1/4 tsp ginger

Makes 12 servings.
Ingredients:

Instructions:
1) Lightly grease a 9x13 inch baking dish. Arrange half the bread chunks in the dish, and top with cream cheese cubes. Sprinkle 1 cup chopped apples over the cream cheese, and top with remaining bread cubes.

2) In a large bowl, mix the eggs, milk, vanilla extract, spices, and syrup. Pour over the bread, apple, cream cheese assembly. Encourage the bread to soak up the liquid by gently pushing it down with a fork here and there (it wont absorb much- but dont worry). Bake as follows or cover, and refrigerate overnight- and bake the next morning!
3) If baking the next morning- remove the bread mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
4) Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is fairly firm and surface is lightly browned. You may need to add more or less time defending on your oven and bread you used- so start checking the center at 45 minutes.
5) Remove from oven and enjoy with syrup!! This recipe can be cut into 16 squares even. Plus you can serve it with fruit and eggs for a brunch or breakfast fit for a king. This freezes very well, and you can reheat it in the micro or oven for an even tastier treat (the flavor gets even better with time!).
